Homemade candy is basically the best gift I can think of. And that gift only gets better when the candy is these super-simple, super-delicious peanut butter truffles.
With literally three ingredients, and no special techniques or tools needed, you can give anyone a bowl of these homemade goodies in less than an hour.
With a creamy peanut butter filling and a crisp chocolate shell these truffles will keep you coming back for more and more and more – so maybe you should make a double batch?
Peanut Butter Truffles –Makes about 30
1 cup sifted powdered sugar
1/2 cup creamy peanut butter
16 ounces (1 pound) chocolate, chopped
1/2 cup creamy peanut butter
16 ounces (1 pound) chocolate, chopped
Beat the sugar and peanut butter together until smooth and creamy. Roll the mixture into tablespoon sized-balls and place on a wax-paper lined baking sheet.. Continue rolling until all the mixture is used. Chill the balls in the fridge for about 20 minutes or until firm.
Melt the chocolate evenly, in either a microwave or double boiler. Drop the peanut butter balls one at a time in the chocolate, then use a fork to remove and place on the wax paper. Continue until all the balls are coated. Let the chocolate harden at room temperature until dry. If your kitchen is warm or you’re in a hurry, you can also help them harden quicker in the fridge.
