Turkey Burger Pitas with Honey Mustard

I managed to spend almost 2 weeks in Israel recently without eating a single falafel ball. I’ve never been a huge fan of the fried treats, despite my great affinity to chickpeas in other forms. But pita bread? That’s another story entirely. I’m more than happy to use fluffy, warm pitas to scoop up hummus, or mop up my plate after indulging in sautéed mushrooms and onions, or ravioli in a sweet potato sauce.

I put some pita bread loaves to good use in this recipe, filling them with turkey burgers, honey mustard dressing and fresh veggies for a hearty, satisfying dinner.

Turkey Burger Pitas with Honey MustardMakes about 10 burgers

Burgers:
2 pounds ground turkey
3 tablespoons soy sauce
4 tablespoons sesame seeds
1 egg
1 cup breadcrumbs
1 teaspoon salt
½ teaspoon pepper
3 cloves garlic minced
1 medium onion very finely diced

Mix together all the ingredients well until evenly distributed. Divide in to approximately ¼ pound burgers. Cook on a tabletop grill or stove top until cooked through – 4 to 5 minutes a side.

Honey Mustard:
1/3 cup mayonnaise
2 tablespoons mustard
1.5 tablespoons honey
1 teaspoon lemon juice

Whisk all the ingredients together.

Assemble the burgers in pita breads, with honey mustard and fresh vegetables.
