The demand for kosher foods in the United States “has been increasing steadily in recent years,” the Wall Street Journal reported following a survey of the kosher market.
The survey found that about 2,000 kosher products of more than 400 companies were now being produced under the rabbinical supervision of the Union of Orthodox Jewish Congregations of America. The figures were compared by the financial daily with “only 1,000 producers and 225 companies fours ago.” Many of the largest food producers in the United States were listed as making kosher products under that supervision.
The survey cited the availability this year of foil-wrapped kosher dinners of chicken, beef and turkey as an example of how American food manufacturers “are adapting modern processing and packing techniques to the ancient rituals that govern the preparation of kosher foods.”
The Wall Street Journal reported that a number of new hotels in New York City have separate sets of dishes and cutlery for kosher affairs and that when the 46-story New York Hilton opens in June, it will have a kosher kitchen able to serve 3,700 people. The Sheraton Park Hotel in Washington stores 15,000 pieces of china and 300 pots and pans in its recently opened kosher kitchen, the financial daily also reported.
