The statistical survey shows that the State containing the fewest Jews—Nevada, with a Jewish population of 264—has no kosher butcher. Other States lacking a kosher trade are Idaho, Montana and North and South Dakota.
Pennsylvania ranks next to New York with 790 kosher meat retailers, most of them centered in and about Philadelphia. Next in order of numbers of kosher butchers are Massachusetts, 575; New Jersey, 575; Illinois, 550; Ohio, 340; California, 290, and Connecticut, 240.
New Hampshire and Vermont have three kosher butchers each, doing a combined business of $120,000 annually. Utah has four kosher butchers. Mississippi and South Carolina have five each.
For purposes of administration of the fair trade and labor provisions of the retail kosher meat code, the country is divided into fourteen regions, each of which will have a regional code administrator. Some regions, like the northeast and southwest, comprise five or six States, while New York and New Jersey are each regions in themselves.
