A survey by nationalities made by Pennsylvania State College and U. S. Department of Agriculture investigators, shows that Jewish families use more fluid milk than others in this state.
A preliminary report covering many phases of the consumption of milk and other dairy products in Philadelphia and suburbs was made public by T. K. Cowden, of the School of Agriculture and Experiment Station, and Alexander Sturges, of the Bureau of Agricultural Economics of the United States Department of Agriculture at Washington.
The enumerators gathering the information interviewed 3,004 families within the city limits and 409 families in the suburbs. The city families lived in 149 different areas. According to the data disclosed by this survey consumption of milk and dairy products by Jews was reported as 2.56 quarts per capita per week among those families which used milk; and 98 per cent of the Jewish families reported using milk, the highest percentage among the nationality groups. Second high were the native white families, 95 per cent of whom use milk, the per capita weekly consumption being 2.54 quarts. The Irish consume 2.53 quarts; the Northern Europeans are next with 2.34 quarts and then come the Polish and Russians, 2.09 quarts, the Mediterranean nationalities, 1.81 quarts and the Negro, 1.57 quarts.
