Survey Brings Reduction in Kosher Meat Prices in Minneapolis

A survey of Kosher meat prices in Minneapolis, conducted by Prof. Robert J. Holloway, marketing expert, for a public commission, served to bring about a 15 percent reduction in Kosher meat prices.

The survey found Kosher meat prices here to be higher than in New York and Chicago. Actual price differentials among comparable cuts of meat showed Kosher meat prices to be six to twelve cents per pound higher than Non-Kosher, but in one case, the difference was 43 cents per pound.

The report analyzed higher Kosher meat processing costs involved in inspectors, allowing down of production in plants killing both Kosher and Non-Kosher due to segregation of the two kinds of carcasses, lower price for hides of Kosher-slaughtered animals and the fact that two animals have to be killed to provide the equivalent amount of Kosher meat.

All these additional costs, however, propagated on a pound blast?s, come to about one and a half cents per pound, according to the survey. It recommended studies by retailers in revising merchandising methods in order to reduce their overhead costs.
